Spinach and Tomato Frittata

Follow the steps below and you will be adding frittatas to your regular breakfast rotation in no time!

sun dried tomatoes


  • cooking spray
  • 1 cup sun-dried tomatoes, drained, rinsed and chopped
  • 2 cup spinach, chopped
  • 1/4 tsp garlic powder
  • 1/2 tsp oregano, dry
  • 8 eggs, large
  • 1/2 cup feta cheese, crumbled (optional)
  • salt, to taste
  • pepper, to taste


1. Preheat oven to 425° F.

2. Line 9″x13″ rimmed sheet pan with parchment paper and lightly coat with cooking spray.


3. Chop sun-dried tomatoes and spinach.

4. Place the sun-dried tomatoes and spinach on the pan and then sprinkle with garlic, oregano, salt, and pepper.

5. In a small bowl whisk together the eggs. Pour the eggs over the vegetable mixture. Top with feta cheese, if desired.

6. Bake for 10-15 minutes or until eggs are set.

7. Season with salt and pepper to taste.

One of the benefits of this dish are the endless variations. Change it up based upon what you have on hand AND to keep your tastebuds happy.

The vegetable, cheese and herb options are endless.

Veggies to consider include onions, peppers, yellow squash, zucchini, eggplant and mushrooms. Explore! Slice veggies thin and small so that they cook through within the 20-30 minute bake time.

Cheeses to consider include mozzarella, cheddar and queso fresco. Yum! Can you taste it?

Herbs to consider include basil, marjoram, Italian seasoning and dill. Yes! The flavor is reaching a WHOLE new level!

Prepare a handful of ingredients, place the ingredients onto a sheet pan (a.k.a. cookie sheet) and roast in the oven for 20-30 minutes.

This recipe creates 4 servings. Create a batch, or several, to last you days or weeks to come. Store servings in airtight container in the fridge to enjoy over the next couple of days. Microwave for 15-30 seconds to reheat. Freeze individual servings to enjoy over the next few weeks. Thaw in the fridge overnight and then microwave for 15-30 seconds to reheat.
