Watermelon Cucumber Salad


Fresh fruit and herbs.  It does not get much better than that!

Give this recipe a try.  It may be yet a whole new way to enjoy these bountiful summer ingredients.

This dish can serve as a side AND it can be a light and flavorful dessert option during the hot summer months.

If the raw red onion turns you off, omit it.  The dish is just as delish without the onion flavor.

Making the dish as a dessert?  Omit the red onion to emphasize the sweetness of the watermelon.

Meal Preparation

Meal preparation (prep) is one of the ways my clients learn how to create more meals at home.  It refers to preparing components of a recipe, or a full recipe, ahead of time.  Rather than preparing recipes from start to finish at every meal, you can prepare part, or all, of the recipe in advance.

Meal prep allows you to re-allocate some, or all, of the time to prepare meals during times of the week that you are less busy or work best for your schedule.  For example: meal prepping on your days off so that you are spending less time creating meals on days you work -OR- meal prepping in the evenings after dinner when you have less constraints on your time.  The timing of meal prep will be different for everyone.

One of the beautiful things about this recipe is that it is PERFECT for meal prep.  By creating this meal ahead of time, it is ready and waiting for you in the fridge.  It can be used as a side dish to a protein of your choice, a snack and/or a dessert.  Prep once.  Enjoy throughout the week!

How to Pick Watermelon


Here is some guidance to choosing the best watermelon.  Look for the following:

1. Yellow rather than white or pale green “field spot” or the side resting on ground

2. Black rather than green tendril or stem-like structure

3. Dull rather than shiny surface color
